Sesame seeds are tiny, oil-rich seeds that grow in pods on the Sesamum indicum plant. Unhulled seeds have the outer, edible husk intact, while hulled seeds come without the husk. The hull gives the seeds a golden-brown hue. Hulled seeds have an off-white colour but turn brown when roasted.
Sesame seeds have a mild, sweet, and nutty flavour and a satisfying crunch when eaten whole. They’re often baked or toasted to bring out a stronger almond-like flavour and aroma and make the seeds more evident in dishes.

The hulled seeds are creamy or pearly white and about 3 mm (0.1 inch) long and have a flattened pear shape. The seed capsules open when dry, allowing the seed to scatter.

Directions
- To make tahini: Blend whole sesame seeds with a dash of olive oil, and optionally a little lemon and salt. This can then be used in home-made houmous, together with chickpeas.
- In baking: Use sesame seeds in a granary loaf, or to top rolls and sesame seeds buns!
- In general cooking: Sesame seeds are commonly used in stir-fries or added to rice. They are often used to coat “California Rolls” in sushi-making. Sprinkle into salads or use to coat barbecue meats. Use sesame seeds in many Chinese recipes, including prawn toast.
- In desserts: Sesame seeds can be blended into a paste and sweetened with honey to make halva, a popular Mediterranean dessert.
- Snacking: Sesame seeds are often used in seed mixes: mix with sunflower seeds and poppy seeds for a “light” mix.
- Producing sesame oil: used as cooking oil in different parts of the world, has a distinctive pleasant aroma and taste, and is used as table condiment in some regions.
